The standard editor Vim which comes with Linux is very good.
It may take a while to learn, but will more than repay the effort you
put in.
It contains syntax highlighting which mostly works, and can be turned
off if you are putting together a document with complicated
constructs.
And it has a built-in Help menu.

I rarely use Windows, but on those occasions when I do I use one of
the word processing packages and save the file as
text-with-linebreaks.
Editing after errors gets messy, which is why I almost always use
Linux.
